For the Australian medical degree, I have found the most relevant and highest yielding to be :
Anatomy - Grey's Anatomy for Students (good for Years 1-3), Moore's Anatomy (more detailed than Gray's but sometimes lacks in some aspects to Gray's), Netter's Flashcards (great for exam prep and remembering all the insertions/origins of muscles of the limbs).
Physiology - Sherwood's Textbook of Physiology (good starting point for physiology on basic organ systems, all you need for Year 1), Guyton's (better for higher years, a lot more detailed than Sherwood's).
Clinical Skills - Talley and Connor Physical Examination, Schwartz Physical Examination (Talley and Connor = Australian, Schwartz = American).
Pathology - Robbins and Cotran's Pathological Basis of Disease (one stop shop for patho), Medmaps (can't remember author, complete book of mechs, useful in condensing pathophysiology for exams).
Histology - Junquiera's
